Listed with each catering dish below is a recommended serving quantity. Use this to estimate the number of each pan required. The protein quantities are based on a 4oz serving size.
Let us know if there are special dietary needs we should be aware of. We have a robust vegetarian line up of dishes to satisfy any palate.
A traditional Hawaiian Luau is similar to a mainland picnic or potluck meal.
Plates consist of 1 scoop of Mac salad and 2 scoops of rice and a protein, or two, or three, or four.
Nice additions are PuPus (appetizers) like our Lumpia spring rolls, musubi or pork hash dumplings.
Top off the meal with a dessert. We recommend the Lilikoi bar squares, or a slice of Pineapple upside-down cake or frozen Dole cups.

4oz of protein is the FDA's recommendation for a single meal. Several factors effect the amount of protein each guest may elect to serve themselves.
If you believe your guests are large eaters, or will serve more than one protein, it's advisable to order additional quantities of protein. See Examples 2 & 3.

The FDA suggests a serving size of 4 oz of protein per meal. If you anticipate your guests will prefer more proteins with their plate please let us know so we can provide a recommendation on the proper amount of proteins for your event.
Often when there are more than one protein to select from the guests will take approximately 4 oz from each protein offered. This can easily double or triple the amount of proteins required for there to be enough food for everyone. For instance, if you have 50 guests, but each guest takes a portion from all three proteins, that would require enough protein equivalent to 150 people.
In general ladies and children are good with the 4 oz per serving. Only you know the makeup of your guests. Simply let us know and we'd be happy to assist you with your catering needs.
A traditional Hawaiian plate consists of a protein, 1 scoop of Mac salad and 2 scoops of white rice.

Dark meat chicken marinated overnight in our own Hawaiian style Teriyaki sauce. Then grilled to a sweet savory glaze. This dish is a mild marinade loved by children and adults.

Thinly sliced beef is marinated overnight in our own Hawaiian style Teriyaki sauce. It's then nicely grilled bringing out all the flavors of Hawaii.

What is a luau without a Hawaiian smoked pig? Our Kalua pork is slow cooked to a juicy perfection with a touch of saltiness. It's served with chopped cabbage we've sauteed in our house spices.

Our Korean BBQ ribs are specially cut and marinated overnight in our own blend of spices. Grilled to perfection these ribs are mouth watering.

Dark meat chicken that has been battered in Japanese Panko breadcrumbs and fried to create a crispy chicken bite. A tangy traditional Katsu sauce is drizzled over the chicken bites. Other dipping sauces available upon request.

Panko crusted tofu that's lightly fried with Katsu sauce. A tangy traditional Katsu sauce is drizzled over the tofu bites. Other dipping sauces available upon request.

Bite size white meat chicken lightly battered in mochiko (rice) flour and fried. This is a great dish when there are young children attending your event. Suggested dipping sauces are our Lilikoi BBQ, Teriyaki sauce, Katsu sauce or Ketchup.

We focus on tasty vegetables such as Carrots, Bell peppers, Celery, Broccoli and Snow peas. Sauteed in Onion, Garlic and Ginger to create a tasty dish with hints of sesame oil and Shoyu.

Our traditional Hawaiian side dishes are what you would find at any Hawaiian Luau or family gathering.
Every protein needs its white rice. Hawaiian style white rice is a short to medium grain rice. We use Botan CalRose rice because it is what most people in Hawaii prefer.

Our Hawaiian Mac Salad consists of macaroni noodles, mayo, celery, carrots and seasoning. This simple, yet tasty side dish is a staple with Hawaiian plate lunches and picnics. Eat one scoop and you'll be hooked.

Our fried rice is traditional Hawaiian style. It includes such yummy treats as Portuguese sausage, fried SPAM, Komoboko (fish cake), carrots, and celery. It's wok fried with ginger, garlic and other yummy island ingredients.

Our Pineapple Fried Rice is similar to our traditional Hawaiian style fried rice without the meat or Komoboko. It includes cilantro, carrots, celery and pineapple for a fresh citrus flare.

We take our Hawaiian Fried Rice and add our house made Kimchi (Korean fermented Napa cabbage with chili spices) wok the two together.

What is a Hawaiian feast without Ambrosia Salad? This heavenly side dish contains pineapple, mandarin oranges, green grapes, cherries, coconut, cool whip, and marshmallows.

Lomi Lomi Salmon is a Hawaiian side dish staple at luaus. It's made from diced salt cured salmon, mixed with diced sweet onions, green onions and diced tomato.

Lumpia is a Filipino version of a fried spring roll. Made in a thin crispy wrapper stuffed with carrots, cabbage and bean sprouts.

Shumai, referred to as Pork Hash in Hawaii, is a steamed Japanese style pork dumpling filled with seasoned ground pork, shrimp and water chestnut.

Manapua is a Char Siu pork (Chinese BBQ) wrapped in Bao dough and steamed to perfection. This tasty treat is beloved on the islands. We warn you, you might get hooked.

Pronounced moo-sue-bee (with a Hawaiian accent of course) is the dish that gives Hawaii the reputation for being the SPAM capital of the world. Musubi consists of a layer of rice sprinkled with Nori Furikake (rice seasoning), a slice of Teriyaki marinated SPAM grilled to caramelize the marinade, a slice of sweet egg pancake all wrapped in a sheet of Nori (sushi seaweed paper).

Welcome to Buzz's Hawaiian Grill's menu. Buzz's specializes in authentic Hawaiian plate lunch dishes. The plate lunch is quintessentially a modern Hawaiian meal.
Modern day Hawaiians grow up eating plate lunches, and if a tourist is lucky enough they will stumble upon a hole-in-the-wall establishment that offers them. Plate lunches were derived from sugarcane and pineapple plantation workers sharing their homeland's food. The plantation workers came to the islands from all over the globe and mostly from China, Japan, Okinawa, Philippines, Portugal, Cuba, and Korea. Another huge influence on the Hawaiian food scene came from the missionaries who traveled from the New England states to bring Christianity and lastly the cowboys from Mexico.
Their homeland recipes were modified to accommodate the available resources of the Hawaiian Islands. These modified recipes created variations of the original dishes making it impossible to obtain their unique flavors outside Hawaii. For instance, there are dishes the Chinese swear are of Japanese heritage, while the same dish is claimed to be Chinese influence by someone from Japan. Bottom line is the dish has become modern day Hawaiian.
Narrowing down which dishes Buzz's should offer was and is a difficult task. What we ultimately elected to do was rotate our menu offering all the dishes our family loves, but at different times. This means not all the ono Hawaiian dishes below are served daily. It also means our daily menu is packed with tasty surprises. Simply put, not all of our dishes will fit on our truck bradda.
